Crystal Spring Rolls

This is one of my favorite vegan recipe that my Japanese friend & I have shared with many people in cooking classes.  I decided to add into my blog so that more people can enjoy it.







1.  Prepare the ingredients:
     a. 20 sheets Vietnam rice paper sheets
     b. 5 tablespoons vegan mayonnaise 
     c. 1 avocado, sliced into 20 pieces
     d. 1 red bell pepper, cut into thin strips
     e. 2 Japanese cucumbers, cut into thin strips
     f.  1 lettuce, divide into 20 small pieces
     g. 1 tablespoon toasted sesame seeds, ground

2.  Soak a rice paper sheet into warm water until pliable. (one wrapper at a time)

3.  Shake to remove the excess water on rice paper then place wrapper on a flat surface.
4.  Put 1 piece of avocado, 1 strip red bell pepper, 2 strips of cucumber, 3 pieces lettuces, some of the vegan mayonnaise and sprinkle with ground tasted sesame seeds across one end of the rice paper sheets.  
5. Fold edges of sheet in and roll up tightly.  The roll should be about 1 inch in diameter.
6. Set aside and cover with a damp towel until finish with remaining sheets.
7. When ready to serve, cut each roll into 3 pieces.
8. Place each piece faceup on the plate
7. Serve with Crystal Rolls' Sauce.
